[Foodie Friday Recipe] Seared Ribeye With Cherry Sauce

Celebrate summer with this delicious seared ribeye with wine and cherry sauce – perfect for a date or special occasion!
This is the season for one of my favorite fruits: luscious, juicy cherries! Take advantage of the bounty and the deep, sweet flavor of these tasty treats in this richly flavored recipe. The fruit-forward cherry sauce is laced with red wine to bring out the complex depth of flavors in the fruit and veggies, and nicely compliment a perfectly seared ribeye steak.
This recipe is adapted from the new cookbook, Eat a Little Better: Great Flavor, Good Health, Better World, by former White House chef and nutrition advisor, Sam Kass. Sam’s philosophy of food is to eat foods that you enjoy, seeking quality over quantity, and this philosophy applies to the meat in this recipe, which is recommended to serve 4, and should be accompanied by several vegetable-focused side dishes. Sam recommends limiting your meat consumption, and when you do eat meat, choosing the best quality and most sustainable sources that you can find (and afford).

For the steak:

For the cherry steak sauce:

1 medium yellow onion, chopped
1 medium red bell pepper, seeded, deveined, and chopped
2 garlic cloves, smashed

1 ½ cups fresh or thawed frozen pitted sweet cherries
¼ cup dry red wine
