[Foodie Friday Recipe] Nutty Chocolate Protein Bites

These amazing little protein-packed nutty chocolate balls will satisfy all of your cravings, and tide you over until your next meal with healthy protein and other whole food ingredients.
Can’t decide if you’re in the mood for salty, sweet, chewy, or crunchy? Don’t! Choose all four with these delicious and healthy snack balls made with raw almonds, cashews, cocoa, coconut oil, and healthy plant-based protein made from pea, pumpkin, sunflower, chia, hemp, and sacha inchi powders. These nutty chocolate bites are packed with protein and superfoods, so they will satisfy your craving for something yummy, as well as stave off hunger pangs between meals.
This super easy recipe can be made ahead, then just store the tasty morsels in the refrigerator in an air-tight container, and grab as needed for a snack on the go, or when you’re feeling peckish but dinner isn’t quite ready yet!
Raw Nutty Chocolate Protein Bites
Yield: 18 bites
Active Time:Ingredients:
1/2 cup raw almonds
1/2 cup raw cashews
1 cup dates, pitted
1 scoop Nutiva Organic Vanilla Plant Protein Powder (about 4 1/2 TB)
1 tablespoon Nutiva Coconut Oil, melted
3 tablespoons Nutiva Classic Hazelnut Spread
1 tablespoon cacao nibs
1 tablespoon chia seeds
1/2 teaspoon cinnamon
Pinch of sea salt (optional)
Cacao powder for dusting (optional)Instructions:
- Add almonds and cashews to the base of a food processor and pulse until evenly ground. Put all remaining ingredients in the processor and pulse until thoroughly combined (the mixture will begin to bind together).
- Remove 1 tablespoon of the mixture and roll it into a ball between your hands. Place the ball on a parchment-lined baking sheet; repeat with remaining dough until all balls are formed.
- Refrigerate until firm, about 30 minutes. Using a small sifter, lightly dust with cacao powder, if desired.
- Store in an airtight container in the refrigerator for up to five days.
