Foodie Friday Recipe: Mason Jar Tom Yum Soup

Need a fast, healthy lunch with tons of flavor? You can’t go wrong with this super-simple and super-delicious Tom Yum soup in a jar!
I am a huge Thai food lover, and one of my absolute favorite Thai dishes is Tom Yum soup. Full of fresh, spicy, and vibrant flavors, this soup hits the spot for lunch or dinner just about any time of year.
This super-quick version is tailor-made for lunch on-the-go. Just prep a few jars ahead of time, then add boiling water when ready to eat, and Presto! Instant healthy lunch! 🙂
Be sure to cut all of the vegetables extra-thin, so they will quickly cook when you add the hot water. As with most soups, this one is totally customizable to your preference. Feel free to substitute different veggies, herbs, or seasonings to make it your very own.
You will need 2 mason jars with lids, plus a spiralizer for making the zucchini noodles.

2 zucchini
2 tablespoons chopped shallots
2 tablespoons sliced lemongrass
2 tablespoons sliced ginger
2 teaspoons fish sauce
2 tablespoons coconut aminos
Juice of 2 limes
1/2 cup extra-firm tofu
1/2 cup mushrooms
1/2 cup red bell peppers
Handful snow peas
1/2 cup chopped bok choy
Handful mung bean sprouts
1/2 cup cilantro
1 red jalapeño pepper, sliced
