[Foodie Friday Recipe] Heirloom Tomato Salad With Basil Oil

A super-simple gourmet heirloom tomato salad to enjoy all summer long!

If you’re drowning in heirloom tomatoes like we are this summer, here’s another great way to use up some of the bounty!

Dress up your amazing ripe heirloom tomatoes with this super-simple dressing made with homemade basil oil to add a gourmet touch.

This is just about the simplest recipe there is, and the only thing that will take a bit of time is waiting for the basil oil to drain, so you should prepare the oil a day ahead if possible.

Any type of heirloom tomato will do, or you can use a mixture. We like beefsteak, Golden Sunrise, and Green Zebra for a multi-colored salad with a variety of sweet and tart flavors!

Heirloom Tomato Salad With Basil Oil

Serves: 6-8
Prep Time: 10 minutes + 6 hours for basil oil

Ingredients:

2 pounds heirloom tomatoes, such as ‘Rutgers,’ scored and cut into wedges
1 medium-size sweet onion, thinly sliced (about 1 cup)
12 basil sprigs
Coarse sea salt, such as Maldon
Freshly ground black pepper
¼ cup Basil Oil (2 cups fresh basil + 1/2 cup extra virgin olive oil)

Instructions:

  • Arrange tomatoes and onions on a serving platter.
  • Scatter basil over top and season to taste with salt and pepper.
  • Drizzle Basil Oil over top.
  • Serve immediately.
