Homemade ramen is one of my favorite quick weeknight dinners! It’s easy, fast, delicious, and almost infinitely variable, so you can tailor it to suit your tastes and mood. You can make it with meat, or meatless, include your choice of veggies, and even try a gluten-free option using noodles made without gluten like the suggestion below.

This tasty gluten-free homemade ramen recipe includes a flavorful and vibrant broth with ginger, garlic,  fish sauce, green onions, and shiitake mushrooms. The eggs add a creamy richness that is pure delight to your tastebuds, and the whole thing only takes about 25 minutes from start to finish.

The gluten-free noodles in this recipe are made from the konjac yam, a staple Asian ingredient which is quick-cooking and low in calories. You can opt for other gluten-free noodles if you prefer, or just use regular ramen or rice noodles.

Gluten-Free Homemade Ramen

Ingredients:

For the broth
1 tablespoon Organic Virgin Coconut Oil
1 teaspoon fresh ginger, finely chopped
2 cloves garlic, finely chopped
