This quick and delicious weeknight dinner is full of flavor and healthy, whole-food ingredients. It’s super easy, and you can have a tasty and nutritious dinner on the table in under an hour with just a bit of planning. And it doesn’t use many dishes either, so there won’t be much cleanup needed!

Fresh veggies and aromatics are stir-fried quickly in a flavorful sauce and tossed with chicken breast. Serve over egg noodles – or brown rice if you prefer. You’ll only need about 40 minutes to prep and cook this, so be sure to give your family a heads-up that they’ll need to head to the table soon!

Easy Chicken Noodle Stir Fry Recipe

Serves: 4
Time: 40 minutes

Ingredients:

  • ½ a bunch of fresh coriander (cilantro)
  • 3 cloves of garlic
  • 5 cm piece of ginger
  • 1 bunch of spring/green onions
  • 1 fresh red chili
  • 1 lime
  • 2 carrots
  • 1 head of broccoli
  • 2 skinless organic free-range chicken breasts
  • 250 g medium free-range egg noodles
  • 50 g unsalted cashew nuts
  • Avocado oil (or other healthy cooking oil)
  • Freshly ground black pepper
  • 1-2 tablespoons low-sodium soy sauce
  • 1 tablespoon fish sauce
