Summer is potluck season and barbecue season – which means it’s also…potato salad season!

If you’re looking for a change from the old-school potato salad recipe you’ve been making ever since you can remember, why not shake it up a bit? Below are three modern and delicious twists on the classic potato salad that will be a big hit on the picnic table this summer! Add the flavors of Asia with purple sweet potatoes, coconut and lime, or throw a Mediterranean twist into the mix with walnut pesto dressing. And of course, the mustardy German version is always a nice change.

These recipes call for coconut oil mayonnaise, but you can always use regular mayo or avocado oil mayo instead – or olive oil mayo, which goes great in the Mediterranean version!

Here are the ingredients you will need for each version (for about 5-6 servings):

Cold German Potato Salad

Ingredients:

1 ½ pounds baby red potatoes, rinsed, scrubbed, and halved

For the dressing:

Creamy Walnut Pesto Potato Salad

Ingredients:

For the pesto:
1 cup packed parsley
¼ cup mint leaves
¼ cup Organic Walnut Halves and Pieces, toasted
1 teaspoon Salt
¼ cup Extra Virgin Olive Oil

For the salad:
2 pounds fingerling potatoes, rinsed and scrubbed

Sweet Potato Salad With Coconut-Lime Dressing

Ingredients:

1 sweet potato, rinsed and scrubbed
1 purple sweet potato, rinsed and scrubbed
1 white sweet potato, rinsed and scrubbed
Virgin Coconut Oil
Coconut spray oil

For the sauce:

Zest and juice of 1 lime
