When you think of Shepherd’s pie, you probably think of the classic lamb-filled meat pie topped with creamy, buttery mashed potatoes – not exactly a vegan dish! However, it is possible to make an absolutely delicious Vegan Shepherd’s pie, as proven by this nutritious and tasty version by one of my favorite chefs – Jamie Oliver.
This recipe is hearty and filling, filled with healthy veggies, herbs, and beans, and topped with creamy sweet potatoes and crispy breadcrumbs. (If you need a gluten-free meal, just leave off the bread crumbs!)
